A tropical drink in one shot. The perfect pina colada shot. 

It’s hot as a tropical island here in New England this week which has put me in the mood for a tropical drink. I decided why not come up with a new shot recipe. It would be all the flavors of a pina colada but go down smoothly in the form of a shot.

It is week 4 of the summer cocktail party. I can’t even believe we are more than halfway through only 2 more weeks left. Myself and a group of some of my favorite bloggers each week are having a cocktail party and sharing our favorite summer cocktails. Make sure to stay to the very end to see what they have made this week. 

If you know one thing about me it’s that I am a huge country fan. Kenny Chesney will always be my number one! In fact his rum line Blue Chair Bay is my number one rum. I always have a big bottle of the coconut rum on hand. Last week when I went to the liquor store, to buy Aperol for the Aperol Spritz, I saw this pineapple rum cream. I had no idea what I was going to make with it but I knew I had to have it. 

When I got home and did a taste test I knew with how smooth it was this would be perfect for a shot and why not combine it with it’s counter part the Blue Chair Bay coconut rum. 

Now if I am just going to make you guys a shot I knew I had to jazz it up a little. I decided to rim the shot glasses with toasted coconut. I made a simple syrup using the recipe equal parts sugar and water over medium on the stove. Just heating until the sides were bubbling and sugar was dissolved. At the same time I put shredded coconut on a cookie sheet and baked it for 5-10 mins at 325 degrees. Keep a close eye because the coconut cooks quickly. 

Let the coconut and simple syrup cool. Did the shot glasses into the simple syrup and then dip them into the toasted coconut.

Prep Time 5 minutes
Total Time 5 minutes

Ingredients

  • 1 part Coconut Rum
  • 1 part Pineapple Rum Cream
  • Ice
  • Simple Syrup
  • Toasted Coconut
  • Fresh pineapple wedge

Instructions

  1. In two bowls place simple syrup in one and toasted coconut in the other.
  2. Dip the rim of shot glasses into simple syrup. Then dip shot glass into the toasted coconut. Now you are ready to make the shot.
  3. In a shaker add ice and with coconut rum and pineapple cream rum. Shake vigorously. Pour into rimmed shot glasses and enjoy!
