An easy recipe for baked beans in the Instant Pot. A perfect side dish for the summer, potlucks and BBQs. A mix of kidney beans, pinto beans and northern beans with brown sugar and maple bacon.

Spring has sprung here in New England and I started up my grill. You can’t just have grilled meat all Summer. We need to starting thinking about side dishes. Every family barbecue if there was hot dogs or grilled kielbasa there were baked beans. Let’s make some Instant Pot baked beans.

Now it’s easy to reach for that can of Bush’s baked beans but it’s pretty easy and fast to make it with your Instant Pot.

Now this recipe can be made with dry beans but I opt for canned. It allows them to cook quicker. Also I am adapting a family recipe that we have made for years both on the stove and in the crockpot.

What’s an Instant Pot?

An Instant Pot is a kitchen appliance that is a multi-cooker. You often hear about it because it is an electric pressure cooker. Which means you can cook meats, soups, vegetables in a fraction of a time. It can also steam, saute, make yogurt, etc.

The Instant Pot is available in a 3qt, 6qt and 8qt. I currently have this 6 qt Instant Pot.

Instant Pot Baked Beans

An easy recipe for baked beans in the Instant Pot

Aperol

Prep time:

Ingredients:
  • 1 Can of Kidney Beans, rinsed and drained
  • 1 Can of Pinto Beans, rinsed and drained
  • 1 Can of Northern Beans, rinsed and drained
  • 6 Slices of Maple Bacon, chopped
  • 1 Yellow Onion, diced
  • 1/3 cup of Dark Brown Sugar
  • ½ cup of ketchup
  • 1 tbsp of White Wine Vinegar
  • ¾ cup of Water
  • 1 tbsp Yellow Mustard
  • 1 tsp Chili Powder

Instructions:
  1. Push saute mode on the Instant Pot. When screen says hot, add bacon and cook until crispy. No oil is needed because of the grease in the bacon.
  2. Once bacon is done click cancel. Add onions and cook for an additional 2-3 minutes.
  3. Add all ingredients and stir together.
  4. Place the lid on and lock. Make sure the vent is in the closed position. Turn the Instant Pot to manual high for 8 minutes followed by a 10 minute natural pressure release. Then quick release any remaining pressure.
  5. Stir and you are ready to serve.

A few quick notes incase you are new to your Instant Pot. Once you set the pot for 8 minutes your IP will say on. While it says on it is coming to pressure. Once the display screen starts counting down then you are cooking. Once it reaches time your IP will start counting back up with an L in front of it.

Quick Release is when the time is up and you let the pressure out of your IP by flipping the vent open. A Natural release is letting your IP naturally release the pressure with out venting. It usually does this after 10-15 minutes.
